OK so I plan on pulling the 383 engine and 727 trany. I have disconcerted all the wiring/hoses and i want to pull the engine and the trany at the same time is it possible with a good engine host and leveler or will i have do unbolt the trany.

yes, easier if you jack up the rear of the car to lower the angle of exit with the engine and the trans.

edit- disconnect the engine and trans from their mounts before jacking up the rear of the car

let them lie somewhat dangling while connected to the hoist.. then raise up the rear of the car while having someone maneuver the hoist/engine/tranny up and away from the car.

this is assuming you have concrete and  you really dont want to scratch up your radiator core support, just a thought.

or you can do it the old fashioned way, but a lower center of gravity on the hoist allows for easier maneuvering if you ask me.

I already took the radiator out. So your saying unbolt the mounts and jack up the rear and the engine and trany should be able to slide out?

you will still have to angle it just right.. but by jacking up the rear, the angle does not have to be so steep and it keeps the hoists center of gravity lower so its safer and easier to move.

Don't forget large drain pan for trans fluid escaping out tail shaft...or get a tail shaft plug

I've pulled big blocks and 727's out of these cars more times than I can count with everything from an engine hoist to a front-loader on a farm tractor and back the other way. I've done it both ways (pulling individual, and as one)

Honestly, I've had more speed/luck/success disconnecting the transmission and pulling the engine first, followed by the trans (either dropping it and sliding it out, or pulling it out of the engine compartment) BY FAR, then I ever had pulling the two out as one. Too much jacking up the frames, pulling the radiator and still bumping into the supports, re-adjusting the balance point.....
Separate the two, its always made my life a lot easier.

Ya i don't have one, i already pulled out the driveshaft so some did drain but would the parts store have a tailsaft plug?

I agree , the best way is to pull the T bars , split the spindles & remove the 4 K frame bolts & drop the K frame
