Could someone tell me how to find out what the paint code would be for my Coronet R/T with the maroon interior?

For which specific part of the interior?  Which year? 

Most service manuals have interior paint code information in the back (at least 1969 does), so that'd be a place to look.

I'll "assume" under TRIM (2nd line) you have P6R & under UDF (top line) you have R
for your '68 Coronet R/T.

per the back of the 1968 PPG paint chart:
GLOSS FINISH COLORS - basically WS27 rear seat shroud & windshield header
"aztec maroon poly" - 50756

EXTERIOR GLOSS FINISH COLORS - basically interior door & quarter frames
"maroon poly" - 50749 (same as exterior color "R" - BURGUNDY METALLIC)

LOW GLOSS FINISH COLORS - basically roof rails
"aztec maroon poly" - 50755

SUEDE FINISH COLORS - basically dash, steering column & WS23 windshield header
"aztec maroon poly" - 71610
