What oil viscosity for my 440

My 440 will be run less than 6000 rpm.  Built with Diamond forged pistons, and moly rings.  And uses a Engle K56 cam---hydraulic lifters.

The shop I have putting the engine together has suggested using Joe Gibbs XP7.  See this link:

Is this what I should be using?  Or should I use something like Mobil 1 synthetic and put the ZDDPlus additive in it to get the zinc and phosphorus and sulphur to protect my flat tappet cam?  The Joe Gibbs XP7 is 10W-40.  Mobil 1 is, of course, available in several multi viscositys.  If that is the recommendation, which one is recommended?

I use 10w40 mobil 1 + comp cams breakin lube in my 446 with SRP pistons and Lunati hyd cam.  4500 miles first season no problems. Broke in with sae 30 plus com cam lube .

I'm going to be doing an engine break in, hopefully within a month or two... Why the 30 weight for break in?  Just curious... Plus, is the comp cam fluid available at local parts stores, or do you have to buy it online?  I tried napa, where I do most of my non-mopar specific shopping...  didn't have it.  Thanks man.

sae 30 non detergent for breakin is old school. Was suggested by machineshop owner. Pre heated oil , pre oiled engine with a drill. Ran for 30 minutes then changed. 1000 miles with rotella 15w-40 +comp cams lube  . Then switched to 10w-40 synthetic+ compcam lube .  (also sacrified a chicken and tap my heels together 3 times while saying "there's no car like mopar"   )

I get the Comp cam lube at Jegs.

Yeah, I remember old school stuff.  Best I can remember is that you run a straight grade oil at first mainly because it was cheap.  Put it in, run it for an hour then drain, some even said drop the pan and clean it.  Why?  to get all the remaining metal filings, casting sand or anything else out of the engine.  Then put in the oil you plan to use long term and run it for 500 miles (why 500?  who knows?)  Change again and you should be ready to go.
