Questions on 318/390 stroker???

I'm looking to build a real torque monster of a small block and have a good condition 318 block ready to go. I am on a slight budget but have some room to upgrade. I want to use:

Eagle cast 4" stroker crank - 103404000

Scat I-beam rods  - 26123

Keith Black dish top forged pistons - KB847030

I have a dual plane alum intake and eddy 650 from past plans new in box ready to go

Eagle suppossedly has radiused journals on their cranks so can you use stock style bearings or is there something special? also I want to run low or mid grade pump gas (87 or 89 octane) so would 360 heads (possibly edelbrocks?) be better because of the bigger combustion chambers and better flow characteristics? (would be approx. 9.4:1 with stock 318 heads)what kind of cam should i use RV, truck, street? And how about balancing what would be needed for harmonic balancer, torque converter, etc? Any help at all is greatly appreciated. Thanks for the help in advance.
