I have made up a  micky mouse  harness to  use  with an external 5 volt limiter  and a set of temp and gas gauges.   Does it matter what  post the wire from the 5 volt side goes to and the one from the sender.   It is a temp.  unit   but I do want a temp gauge    that works for now?????

I don't know about testing your gauges but that's one heck of a garage and some real nice cars.  I'd give my eye tooth for a garage setup like that.  I am trying to do my work out of a single garage.

doesn't really matter. 3rd gen standart gauges/clusters and earliers clusters use one side to positive and the other side to negative just because printed circuit board design.

You can also use a 9 volts batt for a second or two, just for working test, not for graduation. I have done it.
