at wide open throttle it goes like blazes for the first 1 and a half seconds then the whole engine stops and takes a huge gulp of air and then rockets forward...
it sounds like this...

Whaaaaaaa!........(gulp)   WHAAAAAAA!!!!!!!!!!!!!!!!!!

  is that about right?.. is that why the previous owner hooked up a fuel pump?.. thinking that would work not knowing that installed in front the engine was allways starved for gas at start up and had to be pumped..

im speakin about my 340 RR here BTW.

Sounds like the air door over the secondaries is tipping in too quickly.

DON'T adjust the air door just yet!  It's also possible that the choke pull-off diaphragm has a leak in it; it acts as a damper on the air door allowing for a smooth and gradual opening.
