What carb should I use for a procharged 383 with a: m1 intake, headers, (and in the future a street/strip cam, and heads)?  I have a 727 torqueflight, and I am going to be using this car as both a daily driver and my car at the track. I would like to get a carb that I can use now and continue to use as I put on new parts.

2 750 CFM carbs is under carbed for a 8 psi blown 440 I just built

You should seriously consider a supercharger prepped carb.  A buddy has a procharger 383 stroker, and melted a piston when the engine got lean.  A LM1 would be an excellent investment for tuning.

What is an LM1?  And what cfm would the carb have to be.  Also can I use the bigger carb while I don't have the supercharger on(currently I don't have the supercharger)?  Or do I have to buy a smaller carb, and buy a bigger one later (when I put the supercharger on) ?

would 1050 cfm be enough for the carb, and could I run that on the 383 without the supercharger on it?

i know my boss is running two 850cfm demons on his truck....                i dont know if 1050 would be large enough....         if you put that on a 383 without boost it will be grossly over-carbed

whatever you decide to do tune it on a dyno at least that way you can shut it down the instant it goes lean so no damage occures

I suggest getting water injection kit
