What's the very best HD fan clutch and thermostat for a 73 400-4bbl?

Ok finally I'm picking up my 73 Charger that's been at the shop for various post-refurbish work that I attempted. They've got the alignment and suspension right and the motor running the best it's been since I've put the engine back in a few years ago. They told me it's ready to pick up and that it runs really good with the new Weiand intake and edelbrock carb. It's a 400-4bbl. I drove it before they installed the intake and even with the gasket leaking it still had a lot of power. He told me the only problem I may have is that the exhaust needs to be properly installed and that if it sits for extended periods of idling it may start to overheat. They told me the fan clutch is barely working and to install a 195 thermostat. Before I took it in there obviously the intake was leaking and the timing was out of whack but I installed a new aftermarket thermal fan clutch and a 180 thermostat high flow from Mr Gasket. I also installed a Milodon high flow water pump. So if I don't get a replacement fan clutch for a 1973 Charger with a 400-4bbl at the parts store where do I get it? They were acting like I was trying to put junk on it. But where and what kind of fan clutch do I need to get that is top quality? What about a thermostat? I got a Mr. Gasket high flow 180. But what's the best? I know there's only one option for a fan clutch in the 1973 parts catalog for the W Chargers/Coronets/Satellites/Roadrunners with the 400,440 w/ a/c and 2.94 or 3.23 axle and it's a 7.25 diameter fan clutch #3462179. I know my rear end is 3.91 limited slip so it's not original. And I have the big aluminum a/c fan blade, I think 7 blades.
