Going with the plain steel rims on my 74' for the rear.  What size would look good on the rear?  I want them as wide as possible.  My car has stock rear end.  Will they be hard to find?

With a 10" rim most people would try and run a 295 or wider tire, and with stock spring placement in a 3rd gen that's always a very tight fit if you want the tire inside the fender well. See this thread for reference and pictures:
