we shimmed the motor up a little to keep the header off the power steering, but when i turn right it still touches, what should i do to fix it?

Also, will having the power steering that close to the header hurt it in any way?

The heat question answer is to clamp some heat shield cloth to it to help some, but even without, I've run it for years without affecting my power steering.

As far as those headers are concerned, get a propane torch, or any torch really, heat up the pipe and bend it inwards. I have never seen a pair of those headers go in on a B-body without that tube needing to be bent before/during/after the install to make clearancing. You may have issues with needing to dimple the tube that goes next to the starter, and perhaps for a spark plug.
What you are experiencing is why TTI headers that cost twice as much sell.

I have the hedman ceramic coated headers, hed-78056.  Wish they fit better!  I had a problem with # 5 & #7 wires getting burned r/t how the header tube runs.  The other problem is the center link/pitman arm clearance.  I actually had to add a mini skid plate r/t tube hanging to low going down steep driveways.  TTI may be the best...anyone have better ideas for small block headers?

i use 90 degree boots on 5 and 7then run them under the tube,  no burnt wire issues that way. also ive had to chain the motor down on the drivers side to keep then from hitting the drag link under exceleration. i really havent had much problem with the the low tubes dragging, and im surprised.
