Does anyone know of a source that has all of the bolts in a vehicle and what the correct coating is for them respectively.  I know I am dreaming here, but this would be a huge help.

I think that you need to start by investing in the B Body fastener book

then you need to be real nice to Bill at A+M because he knows his fasteners and has many that you're going to need.

That is the plan, but I don't know the original finish on all of them.
