   Will an 833 transmission bolt up to a 360 truck bell housing ?

Sure, if the truck housing is for an 833. Be aware that there are numerous bell housing pilot hole sizes and throwout fork configurations.

   Thats what I am not familiar with, the truck housings I have seen on e-bay don't look like an 833 bolt pattern.

Yeah, it does get confusing with many of the later truck housings having multiple bolt patterns.
