I am dismantling my '69 grille and was wondering what is the best way to remove the small "retainers" that hold the headlight doors to the rest of the housing? Thanks...

Those little press-on rings aren't easy for sure. I soaked my in WD 40 then used a pair of angle tip needle nose pliers to gently work them off. As you know, be very careful with the plastic. Good luck.

You just need something very thin to get between it and the part, gently work your way around it to pry it upwards.
You cna use a thin screwdriver, scraper, razor blade (careful), whatever works. If you're gentle enough you can use a screwdriver in between the grille door and grille surround just to get the clip started, then continue at the clip prying it up.
These clips are readily available just in case it breaks.
