I dont know how the steering boxes look like inside, but i woud think there are some pressure/ balance valves down there. These valves i would think opens up for oil to help pushing the steering where you want it. When you dont turn the wheel, these should be shut, since there is no direction you want it to go. With the engine running on idle, the powersteering pump( driven by a belt from the engine) does not give much pressure, but when you rev it up, it gives more. If one of the valves does not close right, it will apply pressure on one of the sides, and move the steering to one side, i would think :shruggy:
What i would have done, is to take the power steering box, and service it, to make sure all valves and ball seats are closing right, clean out the system, and put new oil in, and give it a go!!!
Remember that this is not something i have done, it is just my thoughts, based on the experiance i have with hydraulics in general, testing cranes for oilrigs for a living. :shruggy:
Good luck

Since we only live once, and all this is not just a dressed rehearsal, but the real thing............ Well, enjoy it!!!!

Is that bad ??? :icon_smile_big
Pay no attention to the man behind the curtain :rotz:

On top of your steering box is a shuttle valve assembly.  This valve assy has ports that are to be perfectly aligned with the ports on the steering box.  If they are not, what you are describing might happen.   Adjust as follows:

Loosen 2 bolts that hold valve to box....just enough to get the assy to move either forward or back with light tapping from a plastic hammer.
With the wheel in the straight ahead position, start & stop the engine several times, tapping the valve either up or down as required until there is no movement of the steering wheel when the engine is both started or stopped.  The valve is now centered on the box.  Tighten the bolts to 200 in lbs.

The adjustment that Chris described is very important.   ;) I've had the same steering wheel behavior you described when letting off the gas after flooring it - It nearly caused me to loose control twice.  After the adjustment, no problems.  :coolgleamA:
