Does the front windshield and rear glass have to come out if you want to replace the head liner ?

no, but it is easier with them out

Hmmmm easier to do with them out.

But then their is the process of taking the windows out them selves !  Which is what I am more worried about lol

No you don't need that. Yes maybe easier but difference is not huge enough to really take care about remove glasses for that.
