I did a search on this topic and surprisingly only found a couple of threads but they were pretty old. After a year of bodywork and sitting, the vinyl top is filthy.

Is it just a soap/water deal and leave it be or after I clean it should I put a protectant on it? 15 years ago when it was on the road, I used to put Mothers vinyl/leather spray protectant on it as it didn't leave that slime like ArmorAll, but is there a better product out there?

Any feedback would be appreciated

Plain soap and water to clean and I personally leave it at that. If you need more protection then you'd need some type of vinyl wax but unless it's out in the blazing sun all day I don't know if it would need it. I know I know I'm no help.

Turtle Wax made a product called "Vinyl Top Wax" but it has been out of production since about 1997.  You could try a E bay search.

Make sure whatever protectants you use are designed for a vinyl top or vehicle exterior, otherwise if other products get wet they will run off (Armor All, etc).

I was using a product called Ragg Topp for a while, great stuff. They make protectants for both vinyl and cloth convertible tops. Not shiny, will not run off.
The bottle I had went bad over the winter (garage got cold, if exposed to cold temps it will go bad), so now I'm using Meguiar's Vinyl Protectant. Works very well. If I find Ragg Topp again I'll buy another bottle.

One of the reasons the vinyl top is installed AFTER paint...I'd strip the top down with 3M general purpose cleaner to remove all the crap from doing bodywork with it installed, I'm sure this includes bondo dust, overspray from primers and paints, be careful with the 3M cleaner as it will remove/damage paint if allowed to sit, after that use vinyl protectant 303 by Gold Eagle

Been using 303 Aerospace Protectant for a few years.....works well
