What is the purpose of such a plate between the carb
and intake manifold. The setup on the Dart I just bought
has an Edlebrock maniflod and Holley 600cfm carb.

Keep the heat away from the carb caused by the manifold.

I got better throttle response, but it might be in my head  :icon_smile_big: I have 2inches.

It doubles up as an adaptor plate as the edelbrock inlet is a spreadbore

Sounds like your engine wanted a bigger intake.
