I would disassemble the car completely, and sandblast the shell. That's just me, though.

Yes strip out the interior, you are in it for the long haul now. This is also a good time to clean and lube the 1/4 window regulators

No question about that, if you go that far with replacing panels and sheet metal, you should remove all of the undercoating then a media blast and a coat of epoxy to make it better than it left the factory....

The interior is mostly out. Only the driver's seat and rear seat back are still in it for the moment. The car went in to just get some frame rust repaired before the engine could go in. Then it went to replacing the quarters. Next to the rear valence and corners. Trunk gutters. It never ENDS!!!!!
