A windage tray is always a good idea. Keeps the oil in the pan where it belongs

Disadvantage are the oil sloshes around the crank throws and the oil and causes foaming. The foaming will cause bearing fail due to air being sucked through the sump and putting air in the passage ways to the bearings. Also on acceleration it tends to build up to the back of the pan and the crank throws hit it thus slowing the RPM's ever so slightly.

Disadvantage to using a stock windage tray? Won't clear a stroker crank...Must use one for strokers.

Really no disadvantages to using one.

Perhaps the only disadvantage is 2 oil pan gaskets and them being a pain in the ass if you need to change an oil pan.

While the windage tray does keep the oil in the sump from sloshing onto the spinning crank it also provides a surface close to the crank for the oil slung off of the rotating asembly to bounce back into the rotating assembly (windage).
Pardon me but my karma just ran over your dogma.
