Need a better batter for pickeral....walleye I guess to the American guys....one that involes beer...yes...beer batter fish will be fine...why? Why not?, post 'em up
Might have had a couple... :cheers:, don't judge me...and give me a better batter recipe!

Whatever recipe you go with, use a dark beer, double or tripple Belgian would be perfect.

my fish breading is this.

       1.  dip the fish fillet into lightly salted flour.

       2.  dip the fish fillet into eggs whipped up with a touch of vegtable oil poured into the whipped eggs.

       3.  dip the fish fillet into kelloggs corn flakes crumbs. (they can be purchased in the breading area)

        4.  deep fry the fillet

         makes a crunchy breading that isnt thick and filling.   thats my favorite for any fish. :2thumbs:

From the Walleye capitol of the world:

Mix
1 part crushed Corn Flakes
1 part crushed Graham crackers
1 part bread crumbs (can be Italian or plain, I mix the two.  IMHO, Walleye is to good to over power with Italian seasoning)

Dredge fish in milk then roll/coat in breading mix.

Place on wax paper on cookie sheet and refrigerate over night.

Deep Fry!

I just looked it up.  Its seems, the Yellow Walleye is a pickerel or related to a pickerel.  The Walleye in the US and Canada is a seperate species and is in no way related to a pickerel.  The article blamed Canada (and why not?) for somehow dropping the "yellow" and causing the confusion :shruggy:

don't know what a pickerale or a walleye is but here's an Australian  "universal" beer batter 1x can of favourite beer(375ml),1/4 cup corn flour,1/2 cup plain flour,1/2 cup self raising flour,salt/pepper to taste.1 sift all dry ingredients together ,2 add enough beer to make slightly runny batter,3 whisk with hand whisk(i use a fork)$let stand for 10 Min's covered with tea towel, dip floured fish into batter and then into hot oil cook till golden .  enjoy :2thumbs:

If it's real Walleye that might be like putting ketchup on prime rib.  But damn, it sounds good.  I'm going to give it a try.   :cheers:

I don't mind fried fish, but I prefer baked.  We save the fish frying for gettogethers out in a field somewhere.  Catfish preferred :drool5:
