Can't help with the shops but in case you haven't heard you can get the matte finish in less time and possibly less money via vinyl wrapping or plasti-dip.  :Twocents:

I can't recommend a paint shop.
But, from other members' recommendations to me I can also recommend PPG's Flexed-n-Flat clear if you decide to do a base/clear matte job. I suggest a base/clear, it's much easier to achieve a uniform finish vs single stage. You can also alter the gloss level by "cocktailing" other PPG urethane clears in with it at different mix ratios. And yes, it's expensive.

Check out this thread. Yes, it's a Chevy. The paint job is holding up awesome, laid down very nice & smooth. I did it in an eggshell finish black for him, not a full flat.

Search for "wrap" on the forum, lots of threads and info.

Give a solid consideration to wrapping. I've seen several in the past year and they are fantastic, and frankly look better than paint.

Wraps r still expensive runs 2500 plus...plastidip runs 400 or so the whole car with 3 coats or so.  There's a guy sells the complete kit out there

Over at FBBO there's a guy with a '68 getting bodywork done here in the Seattle area.  No paint yet, but looks like good work so far.  Could talk with him.
