whats the easiest way to visualy tell the difference in a polly 318 and la 318.

The 318 Poly is commonly and incorectly, called a "Big Block 318" due to it's enormous size. The valve covers are a sure fire way to tell...Most of the internals are the same save for the camshaft (Different valve arrangment).
Nothing wrong with the poly cept the weight.

Simply, the LA valve covers have straight edges and the Poly covers are scalloped on the exhaust side, and much wider.

And the poly valve covers attach with bolts down through the top...LA has bolts around the outside.

the "zig-zag" shaped valve cover on the poly
