How far is a thermostat supose to open up?

This far?  its only about 1/4 of an inch.

Looks like a mr gasket high flow? That looks about right to me.

The last Mr. Gasket (Robertshaw) high-flow I checked was 5/16" wide open.

The last mr.gasket I used decided it didn't want to open at all

Regardless of the brand on the package, all high flows are made by Robertshaw.

got a MR Gasket 180 degree thermostat in now ! checked it before fitting think it was about that ! was sort of supprised it was not more

although looking at that picture think mine opened a little more  , was a few years back though , & bolied it up on the stove suspended  in a saucepan of water      

i always check  every new  thermostat before fitting that way
