Would it be safe to mount the subframeconnectors now without riscing building in any flex?

I wouldn't risk it on a convertible Per.  You can do all the preparing to install work but I'd want the fenders, doors, hood and top frame at least mocked up for proper alignment with the car sitting on all four tires before welding them in.   :Twocents:  (I'd even want the motor and trans. in for the weight/loading.)

If you can check that all sub-frame components are plumb, level, and square, then yes, you can install connectors. This may require putting spacers some of your support points to achieve level, and verifying sub-frame dimension locations with the Body Service Manual.

If the car was all together, I'd suggest doing it with weight on all four wheels, but since it is apart, panel alignment can be set once you begin to re-install the various panels.

The quarter's relation to the front cowling is going to be super critical and the weak point on a convertible unibody chassis. That big U shaped door opening section sets adjustment points all forward of where the door meets the quarter and with no roof to support it, most of the flooring removed, even with bracing there's flex now and after finally "Loading" to compensate for. I've owned and helped restore many convertibles and most of them had frames, it was still an issue in the end. You can't spell perfect without including PER! I'm just cautioning on that detail from a point of past experience working mostly British cars.
Another is to pay very close attention to the top's frame, all the pivot points, mounting brackets and movable sections react in ways that are completely different with the top installed and mounted then hanging loose. Getting it (The top.) installed just right, tight but not too tight, allowing for break in stretch is darn near an art-form in itself.  My next door neighbor has a sweet little (98 I think.) Mustang convertible and who ever replaced the top got it too tight on the frame, she can't just close the doors with the windows up all the way or they catch the lip of the top. I'm sure this didn't happen when the job was done but over time the top relaxes stretching some. I love rag top cars a lot and know their weak points well. This one is going to be my most favorite of all time!

I would want the metal all on a mocked in place first.

I will do all the preparation of them first but wait with welding untill the car is finnished like I did with the charger.
