I know on the 1st Gens there's a Hold Open switch for the headlight doors, is there one on 1970s?

Not that I am aware of on a 70.  There is a manual knob on the bottom of the headlight door motor that will allow you to open them.

No. Put key in RUN, turn on lights, key back to OFF, then turn off lights. That will keep doors open for service.
