six pack vs. large cam

Hello gents - looking for some advice...       I am building a 440 for my 69 Road Runner and currently have a Demon six pack set up...          I have the opportunity to swap for a correct 1969 six pack Holley set up...      the problem is that I have heard horror stories about tuning a six pack with a larger cam -  first off is this true ?

I know the Demon carb set up the outer carbs are mechanically opened as opposed to the vac style holleys...      I like the idea of running stock style carbs (correct look as I am building an A-12 clone) but if the Demons work better I have no problem running them...

any input will be appreciated.
