Hi guys,
I'm thinking of buying a 68 Charger, but I noticed that the inside of the quarterpanels were not undercoated.  Granted I do not intend to drive the car in wet weather, but I was wondering if the missing undercoating might present other problems like some marginal added structural strength to the quarterpanel.

Someone just opted not to evidently. I has no structural integrity it just protects and acts as a sound barrier / heat barrier. You could just spray it yourself or cover it with dynamat or similar.
