I would bet that deer pibil would be really good, especially since the acidic marinade would help tenderize some of the tough meat you find in wild game.  Well, there's that and I really like eating deer...

My guess is the meat was already tenderized after bouncing off the hood.  Oh...and add a bunch of pork to make the venison taste better.
