intake gasket question

ok i'm talking about the metal gasket pan under the intake on my 440 engine,,why do some come with the center hole open and some comes with it blocked off ? just trying to find out which one i should use

I think you are talking about the hole for the heat crossover. The gaskets with the hole allows exhaust gasses to heat the intake for choke operation and better fuel atomization when the motor is cold. If you don't drive your car in cold weather or use the automatic choke you may want to use the pan with the heat crossover blocked.
