How wide could I go?

Hudson Hornet !

I just picked up a set of the re realeased vectors for my 68 charger. 15x7 in front, 15x8.5 in back. How wide, and how tall a tire can I stick under this car? I would like to get the widest that will fit this wheel and my wheelhouse. Thanks in advance for any help!

It depends on the rims backspacing and how high/low you want to sit.

Rears - 4.5-5.0" backspacing and you could put 295's easily(but that width is pushing that rim size).  275/60's would fit that rim perfectly and are 28" in diameter. 
Front - you need about 4" backspacing (with the 7" rim you can do 3.5" backspacing or maybe even 3")  255's will fit a 7" rim.

I have the same size rims with 3.5" backspacing on both.  275/60 in back - 235/60's in front.  Everything easily fits.

You can on some cars used a 5.5" BS in the back, however, you will get very close to your springs and possibly rub, this depends on the tire that is on the rim and sidewall of the tire.
