Took the car out today with the new electric cutouts and noticed when I hammered it from a 20-30 mph punch, top end/floored it screams, but 20%-60% accelerator pushed it acts like it thinks about it and isnt as crisp as i think it should be. What could be causing this very slight, well, not really hesitation, just not clean feeling/sounding?

try going two sizes bigger  :scratchchin:,  see what color the plugs are after a wide open throttle run  :scratchchin:  :popcrn:  , can't really tell what the motor needs with out reading the spark plugs or  reading the exhaust gas tempreture ,  you can get it closeish  by how the motor sounds & feels under wide open load
if you had a air fuel ratio gauge would be easier .... going to fit one at some stage my self :yesnod:

Hesitation usually means it's lean. Tan top is correct....read the plugs or get a wideband o2 sensor on the exhaust and adjust the jetting.

hmm not sure really , don't know much about them ! got to do some investigating my self ! thinking it would be better with a sensor  on each side , all the ones i have seen come with one .... ie for a in line engine  :yesnod: ...  read in a mopar mag about a a/f monitor that comes with duel sensors , but can't remeber what issue that was in  now , as i was not looking for one then   :P
