I plan on pulling the 440 engine out of my '68 Charger.
To start, Is it better to pull the engine with the 727 transmission attached or separately.

I have Don Taylor's book "How to Rebuild Big-Block Mopar Engines".  There are some pictures.  He is using a different set-up and I can't see where he attaches to the engine.
Would you remove the intake and exhaust manifolds??  The picture below shows the leveling unit, I purchased from Harbor Freight.  Where do I attach each chain?  Intake manifold bolts, exhaust manifold bolts, OR??? I labeled the 4 ends of the chains.

John, you can do it either way but i usually pull the engine & trans as a unit. The load leveler is an excellent tool and allows you to tilt the engine/trans for an easier extraction. I attach the chains to the 4 corners of the intake manifold.

I would have to agree on pulling the engine & trans out together, it may seem more difficult to prepare to pull them both out, but it is easier to reinstall the engine when you get to that point. When I pulled my engine without the transmission, I ended up having to pull the transmission out and attach it to the engine to get them both back in correctly. Just my  :Twocents: .
