I see tons of drum-to-disc upgrades. But does anyone make any brake upgrades for cars with factory disc brakes?

I did a some looking at a bunch of disc swap articles and as you said most swaps deal with swaping from drum to discs. I assume that you are talking about your 70 Charger with factory discs? It looks like they want you to swap to a 73 and up disc spindle because of the bigger inner bearing set-up and using the better unicast rotor instead of the two piece rotor, one way you might be able to do your unicast rotor swap to either a 10 7/8 or the bigger 11 3/4 rotor but still keeping your original spindle is to goto scarebird.com and he sells a bushing that will that will convert your 1 1/4 dia. spindle to the newer 1 3/8 dia spindle, if you go with the smaller rotor you might be able to use your factory caliper and adapter and if you want to goto the bigger rotor find the taller adapter for either your stock pin type caliper or convert to the newer slider caliper style since it looks like most of the calipers and adapters seem to interchange on the spindles pretty easy however I have never done this so I can't say this can be done but it might be worth a shot a trying you might also talk them at scarebird.com about the bushing and what you want to do and they will probably be able to help you out, I just asked them a few rear disc brake questions this week and I heard back from them in a couple of days, seems like they are really good to deal with.
