How hard are the vavle seals on a 318 to change and is there any good books or websites with detailed instuctions?

They're pretty easy to change.   After you remove the rocker arm shaft you will need a valve spring compressor and a way to keep the valves closed.   If you have an air compressor then you just need an adapter hose to feed air into the cylinder.   If not you can feed some rope into the spark plug hole and turn the motor over by hand until the rope is  forced against the valves.

I would use seals made of Viton.  Mopar Performance sells them.
