torsion bar paint flex

Should I be concerned that the paint that I put on my torsion bars has enough flex to it?  Maybe I'm being mental, but it seems that a coating with a little bit of give to it would hold up better, since that thing does do some twisting.  Or do most modern paints have flex in them?

I think the original bars were dipped in some coating, according to the nice drips hanging down on my originals.

All modern paints have a very good tolerance of flex, add to that there's a paint softener we use in the bodyshop to paint real flexible parts, I even paint motorcycle seats, never had a problem.
If you want a great looking finish and durability I suggest powdercoating, drop it off as is and they'll dip it or blast it, prime and coat.
If you want to do it yourself, use a reputable industrial acrylic based paint since they hold up a lot better than regular car paint, the torsion bar gets a beating and it won't chip as easily. Do use a good etch primer at the least if you go this route, spraycan etch is fine if you have no 2 component paints.
