What are the difference and what do I have?  a 1973 Charger 400cid

When I search for parts should be looking for 1973 Charger or A, B, E Body parts?

You have a B-Body.

In general terms, they refere to the size of the car.

A-Body is the smaller cars - Dart, Dusters, Demons, 64-69 Barracudas, Valiants, etc. etc.
B-Body is the intermediate cars - Charger, RoadRunner, Coronet, Satellite, Cordoba, Early Polaras and Furys, etc. etc.
C-Body is the large cars - New Yorkers, Newports, later Furys, etc. etc...
E-Body is the 70 and up Barracuda and the Dodge Challenger

Also realize that in 1971-1974 the E and B-body cars shared a lot of parts. Unfortunately, since the E-bodies cost more that can sometimes raise the price of otherwise less expensive B-body parts. Most of the shared components are in the drivetrain but also include some sheetmetal and consoles.

The only thing you have to remember is that a 73 is a "late B Body".  In 73 the K frame (with suspension) changed.  The good thing is that later B body parts will fit (Cordoba, Magnum 75+ Charger...)Most 71-74 B body parts will interchange except for: K frame, Suspension parts, Engine mounts, Torsion bars...

I was just wondering do you Americans consider a Charger a "Big" car or is it just standard size in America?

They were termed "intermeadiate", between the full size C-bodies and the compact A-bodies, and again after '70 shared stampings like the firewall/cowl with the E-body Cuda/Chally.
