I would like the '68 front lights to be lower on the fender like the Plymouths were.
Regarding vinyl tops, check out the side effects of a vinyl top on a California car, my '70 Charger prokect:

I would say I have no solid standpoint on this and would take it on a case by case basis.

My 68 was gold with a gold interior and a white top. Thought it looked awesome.

My current 69 is blue with blue interior and no vinyl top, I did not want to add it.

If it was blue with a white stripe and white interior I think I would have been much more inclined to do a white top.

Possible corrosion based on a -now- decision as far as vinyl top or not would have no weight with me. Reasons being my car would not see daily driver conditions as they did when new and I would take further measures against corrosion if I made the decision -for- vinyl top.

My 68 came originally light metallic green with a black vinyl top it looked amazing.
I'll be doing a bright red 33-1 w/ black tail stripes and in my opinion the top must return  :yesnod:
To break up all of that red being the car is so large.
Also for that nostalgia of an era when these awesome machines ruled the roads a unique feature that's no longer existing.
Finally I'm not concerned about rusting issues for my car won't be exposed to the elements like a daily driver. :vert:

I prefer Chargers without a vinyl top but I have owned more Chargers with the top. So, I guess I go both ways? Lol. Both of my current R/T S.E. and 500 S.E.'s are vinyl top cars.

I like vinyl tops because I'm a left elbow on the door/hand on the roof type driver and vinyl hides my paw prints. 
In my opinion Dodge's look better with vinyl than Plymouths do and 68-70 Chargers are one of the few cars that can go
either way and still look right.

All,
Do the prep work you need done, put the vinyl top on with the appropriate molding and call it a day.. You will have to be careful when pulling the drip rail molding though since the vinyl lips over the drip rail roof lip and then the molding fits over it...  Also, be careful on trimming the vinyl top seam area but the window channel where the molding fits...
