I have a 73 SE and the VIN shows WP to start. What were the differences between the "H", the "S", and the "P" class? Also, were the "P" class the only SE?

As you can see, it was a price class.  But yes, WP (Premium) was SE in most years where that was an option. It does get confusing some times.
WH was used to signify vehicles that had some options and classed as high priced and WL was the standard, bench seat, no rallye dash coupe etc.
WS usually had something to do with a special order of some kind as I recall.
Search Vin decoders to see specifics.

That is what I thought. I was talking to a  guy on another site and he swears he has an SE car but the VIN is WH***.  His biggest concern was his grill doesn't have the little red stripe in the middle or "Brougham" emblems in the interior, but does have the SE emblem on the hood.

An SE in 73/74 would have the louver windows although having said that according to the brochure, you could order an SE with a halo vinyl roof although I have to say in all these years I have NEVER seen one. See page below.
Now the Brougham package is another option. You could order an SE with OUT the brougham interior, those I have seen. That is A08 and is called the "Luxury Pkg" available on Hardtop and SE only. But again you could order an SE without the Brougham pkg and a non-SE with one.
I've included that page as well. But an SE would be WP, no question.

On 73 and 74 this is how usually runs

WP29 makes an SE which got Louvered quarter window ( Opera window with louvers per Parts Manual catalog )
The W makes a B body Dodge ( Coronet/Charger ) the P makes a Premium Package. The 2 makes two doors and the  9 makes a Fastback on earlier models but not anymore since 71.

On 73 you could get an SE but with Halo top and roll down quarter windows. This was an option by special oreder but still a WP29 because was still an SE. This was not anymore an option on 74

The WH23 was the same than above to W And 2 but the H denotes a High class price line, not as high than a SE but still some trim included like woodgrained parts, steering wheel, seat covers etc... the 3 denotes a Hardtop, so then a roll down quarter glass without B pillar.

WL21 is the basic of all, with basic trim. L is low price class and 1 denotes a coupe which means a B pillared car, HOWEVER on Chargers  the B pillar is simulated by the molding attached to the FIXED mounted quarter glass.

On 72s was pretty much the same but just the SE was not louvered quarter glass but roll down and with a body plug to give a diff shape to the quarter glass.

On 71 we got M and S price classes both on 3 but S was for R/T and M ( medium price class ) for Superbees
