What part specifically are you talking about? There are no less than 4 different general colors going on in a factory tan interior, including the headliner and carpet.

I have seen light saddle almost by default. But have seen two or three cars of questionable originality that had the darker color.

I have a swatch chart from Legendary and they suggest the dark saddle for factory, but also suggest the dark headliner for factory too, which is wrong.
