If Im running a hyd cam and I have .020 off the heads with steel gaskets can I run non adj rockers or do I need adj ones?

That shouldn't be a problem. Make sure the lifter isn't bottomed out when you torque down the rocker shafts and you're good to go.  :yesnod:
