Car runs too cold on highway and too hot in traffic

So, when im on the highway my temp gauge is at the second dash. When i crouse around town it will get a little higher, closer to the middle (but not quite). If im in heavy traffic it gets to the third dash. I have a fairly new radiator(year old), but ive been told its not as thick as it should be. I have a new 160 thermostat and expansion tank.

Any ideas? Im a bit worried about the car running cold on the highway...

You've got to verify the 'temps that your car is running at, as your stock gauge may not be reading properly.  Then , go from there...

Typically, running hot in traffic is not enough or properly routed airflow over the radiator. Conversely, running hot at speed is a water flow problem.

Yes, verifying exact temp is a good thing to make sure it is ready correctly. However, if you have anything blocking airflow into the front, have extra holes the radiator core support, don't have a shroud,  or have a fan that doesn't move enough cfm of air, any or all of these can contribute to inadequate airflow.

Im pretty sure i have the wrong fan, but i rarely run into overheating issues as i try to avoid traffic.

What about the car running too cool?

The only way it runs too cool is a non-working or non-existent thermostat. The second dash on the stock gage should most likely be ok.
