I need a new thermostat

Yesterday I removed that cruddy water neck on my 440 with the help of my little yellow friend MAP.  The normal amount of sludge came with the water neck, cleaned up the housing and will get a new water neck tomorrow.  This is also a good time to replace the thermostat and since I was convinced I Was running a high flow 180 I was going to buy just that.  Turns I=out is a plain and simple 192...yeah.

So now what do I do?  The car ran great all this time so should I still get a 180 or get the same as what's in there now?

Does this have to be a high flow for a street cruiser?  Nobody ever seems to have these things in stock anymore, only  the standard types.
