69 Bee idles in neutral fine. Dies as soon as dropped in gear

Guys, I need some help. Recently we swapped the original 383 out for a 440 in my bee. I am using the same carb a holley 700 cfm dp p/n 4778-2 that was on the 383 and it ran like a champ. I am running a team g single plan intake. Timing is about 18deg BTDC. Now the car will start and idle fine in park and neutral. She will also idle fine in gear as long as the temps are around 160 on the gauge. I am running a champion 4 row aluminum with double electric fans. Now as the car heats up it will eventually not stay running in gear. And when I say heat up probably around 180 off the gauge ( i don't have an i/r thermometer but i am working on that) I know gauges are not to be trusted but its what I have to work with right now. My fuel pressure is hovering around 6.5 psi, running some knock off autozone electric fuel pump. I don't have any vacuum leaks that I can find when spraying around the carb with starter fluid. I recently took the carb apart and cleaned everything out with carb cleaner and compressed air and changed all the gaskets. I am not sure if this is just a mis adjusted carb (which could be a very likely thing) or if I have some other hidden problem. I am running a 727 with a trans cooler and I am not having any hardshifts or anything that would lead me to believe its a xmsn problem. I have set the mixture set to give me around  14hg of vaccum in gear. But I am still having this problem of the car dying. I have tried to give as much info as i can off the top of my head. I am really hitting the wall on this one and any help would be greatly appreciated.

The carburetor may be running too lean.
Try this: With a trusted buddy inside the car, have him idle the car while you stand beside the car with a can of starting fluid. As he shifts into drive/reverse, tell him to foot brake to keep the car still, then  spritz some starting fluid down the carb and see if it will stay running. If it does, you'll need to make some adjustment to the carb.

Adjust idle mixture for max vacuum with the engine at operating temp (180-190) then re-adjust idle speed. It might just be a case of adjusting the carb properly for normal driving conditions.  ;)

I like to keep them at 800 in drive to keep the oil splashing around inside.  :yesnod:

What is the vacuum reading in gear ? The power valve may be opening at idle .
Obviously the 440 is a totally differnt build cam etc so the carb needs to be dialled to match you mayhave to drill holes in the throttle plates to allow in more air without exposing the idle transfer slots to get a proper idle mix again .
